Fried Chicken with Basil Chinese Style 三杯鸡


It's been really cold lately. I am not in a mood of washing veggies nor cleaning dishes afterward. This is a very easy recipe and very tasty.





Ingredient:

1. a whole free range chicken or 3 chicken Maryland
2. Chinese light soy sauce
3. Chinese cooking wine
4. Sesame oil
5. Small piece of ginger
6. 2 fresh chill or if you like spicy food like me, put few dry chilies as well
7. Basil leaves
Optional:
1. chicken liver (add at very last)
2. chicken giblet


A)

Marinate the chicken with soy sauce (6 tsp) + Chinese cooking wine (2 tsp) + 4 tsp of sesame oil
Wait 15- 20 mins


B)

Slide ginger and chilies, ready for stir fried




C)
Add some oil in heated pan, fry chilies and ginger first.

Add all the chicken and giblet in, mix it through and add pinch of salt and tsp of sugar



E)

There is no need to add any water for stewed. Close the lid, cook it for 30 mins.  Don't forget to check whether it's burnt.

F)

Add chicken liver and cook through for 3 mins, then mix with basil leave.

Served in Chinese clay pot!
